Hey guys, so I am not a food blogger by any means so this recipe might be a little rough, but I do love to cook and come up with easy and quick recipes like this pesto rice!
Most of the ingredients here came from Trader Joe’s which has quickly become one of my favorite stores. They seriously have the best stuff at really great prices! The only downfall is that it’s becoming like a Target for me meaning I always leave with things I didn’t need.
I made this recipe on a day where Daniel was at work in the morning and I was going in to work that evening. I needed to make this, at least sort of clean it up, and get myself ready for work during naptime. It took me one pan, a cutting board and 10 minutes of my time. As a mom of two who are two and under also working full time I do not have much spare time. I am fully embracing all the shortcuts right now!!
Something to note – I don’t really measure or time when I cook so some of this is estimations.
Vegan Pesto Rice
2 bags of Trader Joe’s frozen brown rice
1 bag of Trader Joe’s frozen green quartet veggies
1 zucchini, chopped
1/2 cup of sun dried tomatoes
1 can garbanzo beans
1 container Trader Joe’s vegan kale cashew pesto
2 tbsp avocado oil
Salt and pepper
Add oil, frozen veggies, and zucchini to a large pan with salt and pepper.
Sautée 2 minutes.
Add garbanzo beans, rice, sun dried tomatoes
Sauté 5-6 minutes, stirring frequently.
Cook until everything is hot
That’s it! I honestly didn’t time this so maybe it takes just over 10, but it’s still so quick and easy!
